Lavender Syrup

Basic Simple Syrup Recipe:

1 cup water
1 cup granulated sugar
2 tablespoons dried culinary lavender buds
1–2 teaspoons fresh lemon juice to brighten flavor

Combine Ingredients: In a small saucepan, stir together water, sugar, and lavender buds. If using salt, add it now.
Heat: Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves. Avoid a rolling boil to preserve the delicate floral notes.
Infuse: Remove from heat and let the lavender steep for 15–30 minutes, tasting periodically to avoid over-extraction, which can make the syrup bitter or soapy. A typical steep time is around 20 minutes for balanced flavor.
Strain: Pour the syrup through a fine mesh sieve or cheesecloth into a clean jar or bottle, discarding the lavender buds.
Cool and Store: Let the syrup cool to room temperature, then cover and refrigerate. It will keep for up to 2–4 weeks depending on storage and sugar concentration. For longer storage, freeze in ice cube trays.
