Lavender Honey Sourdough
Ingredients:
1 cup active sourdough starter – provides the leavening agent for the bread.
3 cups bread flour – gives the bread structure and chewiness.
1/4 cup honey – adds sweetness and moisture to the bread.
2 tablespoons dried lavender flowers – infuses the bread with a subtle floral flavor.
1 1/2 teaspoons salt – enhances the overall flavor of the bread.
1 cup warm water – helps activate the sourdough starter.

Step 1: Mix the Ingredients
In a large mixing bowl, combine the sourdough starter, bread flour, honey, lavender flowers, salt, and warm water. Mix until a shaggy dough forms.
Step 2: Knead the Dough
Turn the dough out onto a floured surface and knead for 10-15 minutes until smooth and elastic. Place the dough back in the bowl and cover with a damp towel to rise for 4-6 hours.
Step 3: Shape the Dough
After the dough has doubled in size, shape it into a round loaf and place it in a floured proofing basket. Let it rise for another 2-3 hours until puffy.
Step 4: Bake the Bread
Preheat your oven to 450°F. Preheat your Dutch oven or baking stone in the oven. Carefully transfer the dough into the hot vessel. Bake the bread for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes until the crust is golden brown. The internal temperature of the bread should reach 200°F when it is done

Lavender Pasta
Salt and freshly ground black pepper
1 medium-to-large zucchini, trimmed
1 medium carrot, peeled and trimmed
1 red bell pepper, cored
1/4 cup extra-virgin olive oil
2 or 3 cloves garlic, crushed
1-2 tbsp culinary lavender
1 pound penne or farfalle cut pasta

Step 1: Bring a large pot of water to a boil and salt it. Shred vegetables, using a food processor, grater or knife. Put olive oil in a large skillet over medium heat and add garlic. When it starts to brown, stir and add vegetables. Sprinkle them with salt and pepper, add a bit of lavender and cook, stirring occasionally, until they barely soften, just 5 minutes or so.
Step 2: Meanwhile, cook pasta until it is just barely tender, a little less cooked than it would be to serve it. Drain, reserving some cooking water. Add pasta to vegetables and continue to cook, adding water as necessary to keep mixture moist.
Step 3: Taste, and add more lavender to taste; it should be distinctive but not too strong. When pasta and vegetables are tender but not mushy, adjust seasoning for salt and pepper, garnish with a couple of lavender flowers if you have them, and serve.

Lavender Honey Glazed Chicken
4 chicken breasts or thighs
1/4 cup honey
1 tbsp dried lavender
2 tbsp soy sauce
1 lemon, juiced
2-4 cloves garlic, minced
Salt and pepper to taste

Step 1: ​Preheat your oven to 375°F (190°C). Or as I like to say, hot but not so hot you can’t stick your hand near it.
Step 2: In a bowl, mix the honey, lavender, soy sauce, lemon juice, and garlic.
Step 3: Place the chicken pieces in a baking dish and pour the glaze over them.
Step 4: Bake for about 30-35 minutes, or until the chicken is cooked through and the glaze is beautifully caramelized. Let it rest a bit before serving.

Lavender Roasted Potatoes
1 lbs baby unpeeled potatoes, scrubbed and washed and halved if necessary
1/2 tsp dried lavender, chopped
1 1/2 tsp fresh rosemary, minced
1/4 tsp salt
Pinch smoked paprika
Pinch chipotle powder
1 tbsp olive oil
1 tbsp butter

Step 1: ​Parboil potatoes: Cook potatoes in boiling water for about 10 minutes until nearly tender. Drain and let excess moisture evaporate.
Step 2: Season: Toss with olive oil, melted butter, lavender, rosemary, salt, smoked paprika, and chipotle powder.
Step 3: Roast: Bake at 400°F (200°C) for 15–20 minutes, stirring once or twice, until golden and tender.
